Bacon Jam

    Ingredients

  • 250 g thick-cut bacon, chopped

  • 1 large yellow onion, thinly sliced

  • 2 cloves garlic, minced

  • 1/4 cup brown sugar (dark brown preferred)

  • 2 tbsp maple syrup (or honey)

  • 1 tbsp balsamic vinegar (not glaze)

  • 1 tsp Dijon mustard

  • 1/2 tsp chili powder

  • 1/4 tsp smoked paprika

  • Freshly cracked black pepper, to taste

  • Pinch of salt (only if needed)

  • 2–3 tbsp water or coffee (for depth)

   Instructions

  1. Render the bacon properly
    Start bacon in a cold skillet over medium heat. Cook slowly until deeply golden and crisp.
    Remove with a slotted spoon and drain on paper towels. Leave about 1–2 tbsp of bacon fat in the pan (discard excess).

  2. Caramelize the onions (don’t rush this step)
    Add onions to the bacon fat with a small pinch of salt. Cook on medium-low for 12–15 minutes, stirring occasionally, until soft, golden, and lightly caramelized.
    Add garlic and cook 30 seconds more.

  3. Build the flavor
    Stir in chili powder, smoked paprika, and black pepper.
    Add brown sugar, maple syrup, balsamic vinegar, Dijon mustard, and 2–3 tbsp water or coffee.

  4. Simmer to jam consistency
    Return bacon to the pan.
    Reduce heat to low and simmer 8–12 minutes, stirring often, until thick, glossy, and sticky.
    It should coat the spoon but still spread easily.

  5. Cool slightly
    It thickens more as it cools. Adjust seasoning at the end — bacon is salty, so taste before adding more salt.

                                                                              Ingredients​

  • 2 tbsp olive oil

  • 650 g brown onions, very finely diced or blended

  • 6–8 garlic cloves, minced

  • ½ tsp cayenne pepper (adjust to taste)

  • 1 tsp smoked paprika (adds depth)

  • 1 tsp salt

  • ½ tsp cracked black pepper

  • 150 g brown sugar (reduced for balance)

  • 200 g smoky BBQ sauce

  • 200 g tomato sauce (ketchup)

  • 200 g apricot jam (about ¾ of a standard jar)

  • 3 tbsp apple cider vinegar

  • ½ cup bourbon (e.g. Jim Beam)

  • 2 tbsp Worcestershire sauce

​

Optional: 1 tbsp Dijon mustard (adds sharpness)​

​

 Instructions​

 1.  Build the flavour base properly

Heat olive oil in a heavy-bottomed pot over medium heat.
Add onions with a pinch of salt and cook slowly for 15–20 minutes,   stirring regularly.

 You want them soft, golden, and slightly caramelised — not just   browned.  This step builds richness.

 Add garlic and cook for 1 minute until fragrant.

​

 2. Toast the spices

 Stir in cayenne and smoked paprika. Cook for 30 seconds to bloom the   spices.

​

 3. Control the sweetness

 Add brown sugar and cook for 3–5 minutes, allowing it to melt and   lightly caramelise into the onions.

​

 4.Deglaze with bourbon

 Turn heat slightly higher.
Add the bourbon and let it simmer for 3–4 minutes to cook off the harsh   alcohol while keeping flavour.

​

 5.Add remaining ingredients

 Add:

  • BBQ sauce

  • Tomato sauce

  • Apricot jam

  • Apple cider vinegar

  • Worcestershire sauce

  • Dijon (if using)

 Stir well.

​

 6.Simmer low & slow

 Reduce heat to low and simmer uncovered for 25–35 minutes, stirring   occasionally.   

  

 You’re looking for:

  • Thick, glossy texture

  • Deep reddish-brown colour

  • Balanced sweet-smoky aroma

​

If too thick: add 2–3 tbsp water.
If too thin:  simmer longer. 

                                                                           

Optional: Make It Next-Level

  • Add 1 tbsp butter at the end for silky finish.

  • Add 1 tsp liquid smoke if you want stronger smoke.

  • Blend at the end for ultra-smooth restaurant texture.

  • Strain if you want a premium “bottled” consistency.

Shallot Peppercorn Cream 

                                                                                 Ingredients​

  • 1 tbsp butter

  • 2 shallots, very finely minced

  • 1 tbsp crushed black peppercorns (lightly toasted first)

  • 1/2 cup dry white wine or brandy (big flavour upgrade)

  • 1 cup heavy cream

  • 1 OXO beef cube dissolved in 1/2 cup warm water

  • 1 tsp Dijon mustard

  • 1 tsp Worcestershire sauce (secret depth booster)

Optional: 1 tsp fresh thyme leaves

Salt and a tiny squeeze of lemon juice to finish

​

1. Toast the Peppercorns

 Add crushed peppercorns to the dry pan for 30 seconds until fragrant.
This wakes up the oils and intensifies the flavour.

 Remove and set aside.

​

2. Build the Base

Melt butter over medium heat.

Add shallots + a small pinch of salt.

Cook 3–4 minutes until soft and slightly golden (don’t rush this).

   Optional: add thyme here.

3. Deglaze 

Add wine or brandy.

Let it bubble and reduce by half (about 2–3 minutes).

 This removes harsh alcohol taste and adds depth.

​

4. Add Stock & Reduce

Add dissolved beef cube.

Simmer 2–3 minutes to concentrate flavour.

​

5. Finish with Cream

Stir in cream, Dijon, Worcestershire, and toasted peppercorns.

Simmer gently 5–8 minutes until it coats the back of a spoon.

​

 If too thin: simmer longer.
 If too thick: add a splash of warm water or stock.

​

6. Final Balance 

 Right before serving:

Tiny squeeze of lemon juice

Taste for salt

Optional: whisk in a small knob of cold butter for shine (monter au beurre technique)

  • 1 tbsp honey or maple syrup

  • 1½ tsp salt

  • 2 tbsp apple cider vinegar

Stir in garlic and tomato paste. Cook for 1–2 minutes until fragrant and slightly darkened.

3. Build the Smoor

Add chopped tomatoes, paprika, sugar, chilli flakes, Worcestershire sauce, thyme, salt and pepper.

Simmer slowly for 20–30 minutes, stirring occasionally, until thick, glossy and jammy.

4. Finish

Stir through chutney if using. Taste and adjust seasoning.

The smoor should be rich, smoky, sweet and slightly tangy.

Cheese Sauce

This rich, creamy cheese sauce is ideal for braai burgers, steaks, boerewors rolls, grilled chicken, and braaibroodjies. It has a smooth texture and a strong cheesy flavour without overpowering the meat.

Ingredients

  • 2 tbsp butter

  • 2 tbsp plain flour

  • 1½ cups full-cream milk

  • 1 cup mature cheddar cheese, grated

  • ¼ cup mozzarella cheese, grated

  • 1 tsp Dijon mustard

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp smoked paprika

  • Salt and freshly ground black pepper to taste

Method

​

1. Make the Roux

  • In a saucepan over medium heat:

  • Melt the butter.

  • Add the flour.

  • Stir continuously for 1-2 minutes until smooth and lightly golden.

​

2. Add the Milk

  • Gradually whisk in the milk.

  • Continue stirring until the sauce thickens (about 3-5 minutes).

​

3. Add the Cheese

Remove from direct heat and stir in:

  • Cheddar

  • Mozzarella

  • Dijon mustard

  • Garlic powder

  • Onion powder

  • Smoked paprika

  • Stir until completely smooth.

4. Season

Taste and adjust with:

  • Salt

  • Black pepper

  • If the sauce becomes too thick, add a splash of warm milk.

Braai Master's Version

For a more traditional South African braai flavour, add:

  • 1 tsp Worcestershire sauce

  • 1 tbsp finely chopped chives

  • A pinch of cayenne pepper

  • This version pairs exceptionally well with boerewors burgers and bacon cheeseburgers.

  • Quick Bourbon Cheese Sauce Variation

For burgers served with bourbon-glazed bacon:

  • Prepare the sauce as above.

  • Add 2 tbsp bourbon after the milk has thickened.

  • Simmer for 1 minute before adding the cheese.

  • The bourbon adds a subtle smoky sweetness that works beautifully with beef mince patties cooked on a Charkii braai.
